It’s summertime which means it’s ice cream season in Texas! I recently stumbled by a custom build-your-own ice cream sandwich joint called The Baked Bear while visiting Grandscape in The Colony. The concept is simple: you pick your choice of cookie, choose your ice cream, and wrap up your ice cream sandwich with whatever toppings you desire.
I love that they have gluten-free, dairy-free, and vegan cookie and ice cream options so everyone can enjoy building their own ice cream cookie sandwich regardless of allergies, sensitivities, and dietary preferences.
I enjoyed the vegan chocolate chip ice cream sandwiched between a vegan chocolate chip cookie and another vegan chocolate brownie cookie! They even warmed up the cookies for me which tasted even better when contrasted with nicely cold ice cream!
