My discovery of the Dallas Grilled Cheese Co happened like a scene in a Rom-Com. I had spent the majority of my day shopping and hadn’t realized how much time had passed since breakfast and had reached “hangry” status.
Like a mirage in a desert, there was grilled cheese goodness staring me in the face. An entire restaurant devoted to the most awesome member of the dairy family? Yes, please. Between the amazing staff and the even amazing-er food, I was prepared to power through the rest of my christmas shopping.
I wanted to start with the basics for my first visit. I got a bowl of potato soup and a basic grilled cheese. My companion got the grilled cheese cheeseburger. You guys, I’m serious about my potato soup and these guys did NOT disappoint. It was thick, creamy and cheesy, just like a good potato soup should be. I’ve made the same grilled cheese sandwich a gazillion times but they don’t come close to the one I had here. The bread to cheese ratio was exactly right.
Next visit I have a problem though, do I get the Cattlemen’s Grilled cheese with juicy smoked brisket, Muenster, Smoked Gouda and yellow Cheddar on Rustic Bread with a side of house-made barbecue sauce or, the Grilled Mac ‘N Cheese with a Gouda and American mac and cheese on a sourdough bread?
